Barley and Veggie Bowl:

For the grains and veggies:

¼ cup barley, made according to the package directions

1 small beet, peeled, chopped and steamed

1 cup frozen kale, heated according to the package directions

½ cup frozen edamame, heated according to the package directions

Once all the veggies are heating through and the barley is made mix everything together in a bowl.

 

Lemon Tahini Sauce

Juice from half a lemon

1-2 Tbsp Tahini

1 Tbsp Nutritional Yeast

½ tsp sea salt

Mix all ingredients together in a small bowl then drizzle over veggies and gently stir.

Serve immediately.
