I want to share a recipe using lentils and brown rice to use as a side to a salad.
1 cup soaked lentils
1/2 cup brown rice
1 onion, sliced
Water sauté the onions on low temperature (or use 1 tsp of avocado oil to give them a nice caramelized texture) for fifteen minutes.
Add lentils and brown rice and cover with water.
Low boil for an hour or until soft. Add more water if needed during cooking.
Salt when completed and enjoy.
The lentils should produce 2.5 cups and the brown rice should produce 1 cup. You can use the lentils as your protein and brown rice as your high fiber carb. 3/4 to 1 cup serving size.
