Blueberry Banana Cream Pie
Faced with the challenge of needing to create a sweet treat for a birthday or special occasion while trying to follow the Cambiati Lifestyle? Perhaps you’ve thought the easiest thing is to avoid treats altogether and let others enjoy. But why do that when you can create a delicious “raw” whole foods dessert like this Blueberry Banana Cream Pie and EVERYONE can enjoy a delicious dessert free of any processed ingredients or refined flours or sugar. What a great way to enjoy the sweeter things in life and still feel good afterward (no sugar or gluten hangover to worry about!). We think of it as “Cambiati Friendly” – to be enjoyed in moderation, and a great way to enjoy dessert on occasion and still maintain your Clean Slate!
For crust:
- 1 cup raw almonds
- 1/4 cup raw pumpkin seeds
- 3 tbsp raw flaxseed
- 6 pitted Medjool dates
- 1 cup dried unsulfured apricots
- 5 tsp coconut oil
- 1 tbsp filtered water
For filling:
- 1 cup raw cashews
- 2 ripe bananas
- 1 tsp vanilla extract
For topping:
- 1+ cup blueberries (aprox.)
- Optional: 1-2 bananas, sliced
*All ingredients should be raw, unrefined and organic if possible
Place the almonds, pumpkin seeds and flax seeds into a blender or food processor until it’s a fairly fine powder and set aside in a large mixing bowl. Add apricots to blender. Remove pits from dates and add to blender with water and 3 tsp of coconut oil. Blend until thoroughly mixed. Add to mixing bowl with nuts and seeds, and combine with a standing mixer or your hands. Coat a 9.5 inch pie dish with 1 tsp coconut oil and start to spread the crust into your dish. Put the last 1 tsp coconut oil over the top and continue to gently press and flatten the crust with your hands.
In a food processor or blender, blend together cashews, bananas and vanilla extract until smooth and creamy. Place in crust.
Decorate with blueberries in a circular pattern, or get creative and design your own! If using, slice bananas thinly and place along the top with the berries.
