This is one of my favorite recipes because it is so yummy and it’s soooooo easy! I think I ate this every day for lunch for about a year. In a pinch it can be made in the microwave but obviously the stovetop is a better option.You can add chicken or just use the broccoli slaw as your veggies with healthy fat on the side of another protein and carb. This is my go-to recipe on a busy night because you can buy a whole roasted chicken, broccoli slaw, vegan pesto, and sundried tomatoes then whip it up in about 6 minutes. The best part is that there is NO PREP doing it that way.
