Golden Cauliflower

Ingredients: 

1 head of cauliflower, (cut into florets)

2 Tbsp. coconut oil, melted

1 Tbsp. Turmeric (powder)

1 Tbsp. nutritional yeast

1 tsp. black pepper

½ tsp. sea salt

Directions: 

Preheat the oven to 375 degrees F. and line a large baking sheet with parchment paper.

In a medium sized bowl mix the cauliflower florets with the melted coconut oil until the florets are gently coated with oil. Sprinkle on the seasonings: turmeric, nutritional yeast, black pepper, and salt. Mix well.

Lay the cauliflower out on the baking sheet in a single layer and bake for 20-25 minutes, until the tips are turning golden brown. Remove from the oven and serve. This keeps in the refrigerator for up to 3 days.

We breathe more than 300 cubic feet of air every single day and usually don’t even give it a second thought – unless air quality plummets and begins to cause unpleasant symptoms!

Here in our part of California, there are 3 common culprits that are generally responsible for polluting our environment and decreasing air quality.

They are:

  1. Smoke from wildfires
  2. Vehicle emissions
  3. Industrial pollution

These pollutants release numerous gases and 4 of them are especially harmful

Smoke, exhaust fumes and industrial pollution contain four gases that are harmful at best and even deadly if they accumulate to high enough levels.

These gases are:

  1. Carbon Dioxide – Carbon dioxide is always present in the atmosphere, but it becomes dangerous when smoke and heavy pollution produce too much of it.

A large amount of carbon dioxide is toxic and it decreases the amount of breathable oxygen in the environment.

  1. Carbon Monoxide – Wood, fossil fuels and other organic matter release poisonous carbon monoxide as they burn.

This is one of the most dangerous gases in smoke and pollution, because it enters our cells and replaces life-sustaining oxygen.

  1. Nitrogen Oxides – Combustion of organic matter also produces nitrogen oxides that are not particularly threatening on their own.

    They become dangerous, though, when they bond with other substances in the air and contribute to the production of harmful smog, acid rain and ground-level ozone.
  2. Ozone – Most ozone is located in the stratosphere where it gives us many benefits by filtering out harmful UV rays.


However, when nitrogen oxides and other pollutants form ozone at ground level, it is toxic to us, as well as to animals and sensitive vegetation.

Polluted air also contains a variety of irritating compounds

Smoke from wildfires and other environmental pollutants don’t just release harmful gases. They also contain a variety of microscopic compounds that act as irritants when we breathe them in.

The most common compounds found in polluted air are:

  •  Heavy Metals – Cadmium, lead and mercury generally enter the atmosphere by way of vehicle emissions and industrial pollution, but they can be present in smoke depending on what is burning.
  • Volatile organic compounds – These organic compounds are formed by several gases that evaporate quickly. They give wood smoke its familiar smell and are not harmful in small amounts.
    When they become concentrated, though, they irritate our bodies in a variety of ways.
  • Tiny Particles of Matter – Smoky, polluted air always contains tiny particles of matter that end up entering our respiratory systems.
    Most of these microscopic particles are organic, but a few, such as microplastics, are inorganic.

The gases and compounds in smoke and pollution harm our health

Pollution in the air around us enters our bodies as we breathe and it immediately begins to irritate our respiratory systems.

Many of the microscopic particles of matter in pollution remain in our lungs, but the remaining gases and compounds enter our bloodstream and begin to harm our health at a cellular level.

They can eventually trigger a variety of symptoms, including:

  • Coughing
  • Shortness of breath
  • Wheezing
  • Asthma attacks
  • Irritation of the throat
  • Irritated sinuses
  • Nasal drainage
  • Decreased immunity
  • Headaches
  • Chest pain
  • Rapid heartbeat
  • Fatigue
  • Lack of energy

5 Ways to keep pollutants out of your indoor environments

It is essential to prevent smoke and pollution from coming into your home, workplace and vehicle, because this will keep you and those you love from breathing it in as much.

Here are 5 ways that you can keep smoke and pollution at bay:

  1. Stay informed – Staying abreast of the latest information about the air quality in your area is one of the most important things that you can do to protect yourself.

Air NowType in your zip code and get air quality data for your specific area.

California Air Resources BoardThis website provides a wealth of information about air quality all across California, as well as insights into what is being done to improve air quality.

Installing an air quality app on your phone can also be very useful. Two of the best apps are:

  1. Seal your house well – Close windows tightly and keep damp towels under outside doors. You should also seal chimneys and any vents that might allow smoke in from outside.
  2. Filter indoor air – This includes installing HVAC filters with a high minimum efficiency rating (MERV), routinely replacing the cabin filter in your vehicle and using high-quality air purifiers.

The best air purifiers, for example the Hathaspace Air Purifier and the Partu Air Purifier, are able to filter out more that 99% of all the smoke and pollutants in the rooms where they are used.

  1. Clean floors with a HEPA vacuum – HEPA vacuum cleaners, such as the Hoover Windtunnel, have high-efficiency filters capable of filtering out more than 99% of all particles, allergens and even smoke.

Cleaning floors routinely with a HEPA vacuum can help decrease the amount of pollution and microparticles that are present in an indoor environment.

  1. Dust lightly with a damp rag – Microparticles from pollution and ash from wildfires tend to settle on flat surfaces in homes and offices. Dusting occasionally with a damp rag will remove these small particles and keep them from being stirred up and re-entering the air.

5 Ways to boost your health as you face smoke and pollution

Dealing with ongoing wildfire smoke and pollution is stressful.

This chronic stress gradually wears away at our energy, immunity and general health, so it is essential that you put a priority on taking care of yourself and boosting your health as you work through these adverse circumstances.

We tried Nancy’s Oat Milk yogurt and decided that though it’s a pretty CambiatiClean and plant-based option. It’s a bit tangy with a few lumps (a nod toward cottage cheese), so it would be best not eaten plain but added to dishes like spicy curry or to top a soup. The neutral flavor would also make a nice base for goodies like protein powder, nuts and berries, cinnamon and a dash of vanilla extract for a little CambiatiClean parfait. It’s lower in fat than traditional dairy and contains probiotics, which are great for your gut, so it can make a nice addition to a shake for some added creaminess and health benefits. IV Vitamins are supporting people during Coronavirus times…

It’s an uncertain time and so much is up in the air. However, what we DO have control over is supporting our body the best way we can in the face of coronavirus and the impending cold and flu season. We all want to boost our immune system so as to not give corona a fighting chance.

We have been following the latest research on how other countries are fighting COVID and the research shows that high-dosage IV drips are very helpful. For years we have coached our clients on incorporating tools that boost their immune system, but now even more is necessary. That’s why we added IV infusions that include potent vitamins, minerals and antioxidants. Promising research IVs show in supporting the immune system and preventing viruses from taking hold is so inspiring. Chinese doctor Richard Cheng is involved in three clinical trials looking at the use of IV vitamin C at a dose of 6,000-24,000 mg/day. He recommends the use of intravenous vitamin C for prevention of coronavirus. He and his team have been looking at how vitamin C affects the course of the virus since February. Dr. Cheng is a US board-certified specialist in anti-aging medicine and states that “the current sole focus on vaccine and specific antiviral drugs for epidemics is misplaced” as a silver bullet against this crisis. Shanghai is now regularly using vitamin C IV therapy against COVID-19. It’s being found to help develop a stronger immune system response, lower the cytokine storm (an immune response where the body starts attacking its own cells and tissues instead of or in addition to the virus itself), and/or improve antiviral activities via other mechanisms. It is theorized that pulmonary failure (Acute Respiratory Distress Syndrome, or ARDS) is the main way COVID-19 damages and eventually kills many people. This process increases oxidative stress and leads to cellular injury, organ failure and potentially death. As a vaccine and antiviral drugs are not yet on the market, we can support the body’s defenses with IV Vitamin C and other antioxidants. Vitamin C can also be used in conjunction with other medications, and may even have a synergistic effect.

Vitamin C was also able to reduce ICU length of stays in an analysis of 18 clinical studies on ICU patients in 2004. It was found that 17,000 mg/day of IV vitamin C had shortened the average ICU stay by 44 %. When administered with medical supervision, high-dose vitamin C should be safe without much risk of adverse side effects. Similar prospects are happening with people struggling with SARS-CoV-2.

Smokey BBQ Tofu Bacon

I was craving smoky flavors but wasn’t in the mood for a heavy meaty meal. My creative juices were flowing and then this plant based BBQ creation was born!

Liquid smoke is one of my secret go-to ingredients for making anything taste like it was just pulled off the BBQ. Check out my favorite Liquid smoke brand below.

This Smoky BBQ Tofu is great in a wrap, on the side of a salad, chopped up into bits on top of a soup or is excellent to enjoy on its own. This is a plant based take on a classic favorite and the unique flavors of this marinade are perfect for your next backyard summer gathering or afternoon brunch!

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes


Ingredients

-8 oz extra-firm Organic tofu

-1 Tbsp Liquid smoke 

-1/4 cup “soy” sauce  (or any gluten free option)

-1 tbsp tomato paste

-1 tbsp ground black pepper

-tsp sea salt

-1/2 tsp smoked paprika

-1/2 tsp onion powder

-1/4 tsp garlic powder

-1 Tbsp avocado oil

Directions

  1. Drain liquid from the tofu. Place tofu on a plate with a paper towel on top and bottom. Place a heavy object on top of the towel to press out the excess liquid. Let sit while preparing the marinade.
  2. Preheat oven to 410 degrees fahrenheit. Line a baking sheet with parchment paper and place a metal rack on top of the baking sheet. This will ensure even cooking and the baking sheet will catch any drippings. (hello easy clean up).
  3. Whisk together the Liquid smoke, “soy” sauce, avocado oil, tomato paste, black pepper, paprika, onion powder, salt and garlic powder.
  4. Cut the tofu into thin bacon like strips. (The thinner the crispier). Dip each slice into the marinade, then place on the rack. Repeat steps until all strips are evenly spaced on the rack. You will have leftover marinate, set this aside.
  5. Bake for 12 minutes. Remove the baking sheet and gently flip over the tofu. Dab remaining marinate on the flip side of your bacon strips. Place rack back into oven and bake for another 8 to 12 minutes, or until golden brown. (Keep your oven light on to make sure they don’t burn!)
  6. Remove from the oven and serve immediately.
