Crispy Cabbage and Tofu Salad

This fiber-filled Vietnamese-inspired cabbage and tofu salad is not only fresh and hearty, but is simple enough to whip up on a school night but impressive enough to serve for company! It’s also a rainbow-colored show stopper, which also means it’s filled with tons of nutrients from the whole spectrum. It’s a great mix of crunchy and chewy textures, and sweet and umami flavors. We can’t get enough of this dish!

Vietnamese-inspired Cabbage and Tofu Salad: Serves 4

Ingredients:

3.5 TBSP tamari

2 tsp. xylitol

2 tsp. fish sauce

Zest and juice of 1 lime

1/2 jalapeno, seeded and minced

1 garlic clove, minced

2 TBSP toasted sesame oil

1/2 pound extra-firm tofu, cut into bite-sized pieces

6 cups shredded cabbage, either purple or Napa

1 large carrot, grated

1 medium cucumber, julienned or cut into half moons

1 red bell pepper, cut into small pieces

2 cups green beans, cut into desired size (1/3 or 1/2 of size)

1/3 cup roughly chopped almonds

2 TBSP chopped cilantro, plus more for garnish

1 cup rice noodles, cooked

Directions for sauce:

1. Mix together 2 TBSP tamari, xylitol, 1.2 tsp. fish sauce, lime zest and juice, jalapeno and garlic. Add in 2 TBSP of the toasted sesame oil.

2. Heat 1 TBSP avocado oil in a large skillet. After a minute or so, add tofu. Cook about 3 minutes or until slightly brown on the bottom. Turn to other side and cook another 3 minutes or so. Transfer to a plate lined with a paper towel to drain excess oil.

3. In a bowl, whisk together 1.5 TBSP tamari and 1/2 tsp. of the leftover fish sauce. Coat the tofu.

4. Mix together the tofu, vegetables, almonds, rice noodles, cilantro and sauce. Add some more crushed almonds and cilantro as desired as garnish. Enjoy!

Creamy Avocado  Pesto (Vegan & Nut free)

Ingredients:

– 1 medium Avocado

-2 cups Basil

– 1 garlic clove

-1/2 cup nutritional yeast

– 1/4 cup olive oil

– 1 lemon juiced

– Salt and pepper to taste

Directions:

Combine basil and garlic in a food processor and pulse until combined. Next add the avocado and lemon juice and pulse again. Add nutritional yeast and pulse once more while slowly adding in the olive oil. Pulse/ puree until combined to desired consistency. ENJOY!

This pesto is filled with healthy fats that can easily be added to any dish. Combine with Zucchini noodles, on top of a salad or over fish. This versatile pesto is great for kids with nut allergies and vegans alike. This pesto is best when eaten immediately and can darken due to the avocado. Kathy joined the Cambiati Cleanse in March of 2018. Prior to joining us at Cambiati she had been living in a hotel for 6 months while her house was being remodeled. Those six months included lots of take-out food and lots of stress. These are not a good combination for taking care of yourself and Kathy was feeling older than her 64 years. She felt sluggish at work, and uncomfortable in her skin.

When Kathy and her husband were invited to a wedding in the UK in August, she knew she wanted to go to that wedding looking and feeling her best. She also knew that she needed help and support cleaning up her eating habits.

Kathy jumped into the cleanse full of excitement and a touch of fear. She had done other strictly weight loss programs in the past (Weight Watchers) and nothing stuck long term. One thing that’s different about the Cambiati cleanse is that we do not simply look at calories in verses calories out. At Cambiati we teach our clients how to eat real food that nourishes and supports them. We also teach participants about the importance of fluid intake, stress management, ways to exercise to support your goals, and mindful strategies to get good sleep.

At the end of the cleanse Kathy had more energy and had lost nine pounds. She was super excited about her progress and wanted to keep working with us to continue her momentum. At that point she signed up for our Club Cambiati Membership. Kathy and her nutritionist Alison had three months to work together before the wedding in August. During that time Kathy continued to focus on eating Cambiati Clean and to tune in to how food made her feel. She also became very adept at finding ways to add exercise into her days and how important this was for her well-being. She slowly became the person she most wanted to be. She was full of energy and was starting to really become interested in nutrition and how food could support her.

In August Kathy and her husband went to the UK and had an amazing time at the wedding. She was able to dance at the wedding, go sightseeing as she wanted, and knew just want she needed to take care of herself.

Upon her return Kathy and Alison continued to work together. She was ready to dive deeper into her health and understanding her body. Kathy took a genetic test and learned more specifically how her body responded to macronutrients, coffee, and alcohol. She also learned which micronutrients might be low genetically, making them important to get from supplements. With this new data Alison and Kathy were able to continue tweaking her nutrition and her lifestyle to support her even more.

Then Kathy decided to dive deep into her hormones. Long ago diagnosed with hypothyroid, Kathy had been taking hormone replacement for a long time. With so much success accomplished by changing her diet and supporting her body holistically she was ready to see if she could do the same for her hormones. Doing the thyroid panel was informative. First, she learned she did not have Hashimoto’s Disease, an autoimmune hypothyroid disorder. Second, she learned some specific nutrients that she could take to support her thyroid. Finally, she discovered a sleep protocol that really focused on hormone balance and supporting her in the best way possible.

In total Kathy lost 30 pounds while working with Cambiati, one of her initial goals, along with creating better eating habits. Throughout the course of working together Kathy and Alison talked for hours about nutrition and wellness, and during that time Kathy created healthy habits that supported her in ways that were unimaginable when she started. She decided she wanted to help others do the same. Kathy decided to go back to school and study to become a nutrition consultant. She likes to say that joining Cambiati “changed my life,” and we are so happy to have been a part of her journey!

It’s easy to forget that food naturally grows with Earth’s seasons when the grocery store has a full selection of fruits and vegetables year round. In addition, most people don’t realize how far these foods need to travel to make it all the way to their plates. A majority of produce found at the grocery store is sourced from Mexico, Peru, China and Canada. Oftentimes picked and plucked before their ripeness or sprayed with chemicals to ensure they make it safely and beautifully to the store.

It’s important to remember that the most nutritionally dense foods are foods grown in season, locally and picked closest to their harvest date. 

We love farmers markets and recommend them to all of our clients. Not only will you get the freshest (and tastiest) produce possible, it is often cheaper and supports local agriculture.

This week is all about dry brushing!

  • What is dry brushing?
    • Dry brushing is the process of using a brush with stiff bristles against the skin to help  enhance blood flow, exfoliate dead skin cells and boost the lymph system.
  • What are the benefits?
    • Lymphatic support
    • Exfoliation
    • Cleans pores
    • Increases blood circulation
    • Detoxifies the body 
    • Feels great & can boost energy
  • What type of dry brush should I use?
    • You want to use a natural stiff-bristled brush. Some bristles are stiffer than others, and it depends on your skin’s sensitivity and preference. Some brushes come with a detachable handle and you can use the handle to help in reaching your back.
  • How to dry brush: The method
    • Always start at your feet and brush upward toward the heart. You want to motion against the skins natural flow to stimulate opposite movement. When you get to your arms, begin at the hands and work upward towards the heart. Use firm, small strokes upward, or work in a circular motion (depending on what feels most comfortable for you). For the stomach, work in a clockwise direction. You can repeat the motions for 5 or more stokes.
  • When should I dry brush?
    • The best time to dry brush is just before a shower. Its a great addition to add on to your shower routine and can take as long or as little time as you like! Afterwards you can wash off any dead skin cells and flaky skin while you shower. Bonus: Alternate between hot/ cold in the shower for extra circulatory benefits. 
  • Warnings:
    • Dry brushing is not recommended for people with sensitive skin or skin conditions such as eczema, psoriasis, and excessive dry skin, as it can aggravate the condition—and also cause often painful irritation
    • Never brush over skin that is broken, which includes cuts, scrapes, lesions, sores or burned skin, including sunburns

Another Cambiati Clean cookie recipe coming your way! These are a double chocolatey twist on your favorite chocolate chip cookie. Made with 5 ingredients, these cookies can be whipped up quickly and are incredibly rich and decadent! ENJOY

Chocolate Sunbutter cookies

1 cup sunbutter (can sub cashew, or almond butter- creamy and unsalted)

1/4 cup unsweetened cacao

1/4th-1/2 cup coconut sugar

1 egg

1 tsp baking soda

1/4 cup chocolate chips (we like the brand Enjoy Life)

Directions:

1) Preheat oven to 350 degrees 

2) Mix sunbutter and coconut sugar until combined. Next add in beaten egg.

3) In a small bowl, whisk together cacao and baking soda to ensure all clumps are smooth. 

4) Slowly stir in the dry ingredients with the wet ingredients until evenly mixed (this should get increasingly dark as you stir). Sprinkle and fold in chocolate chips. 

5) Line a baking sheet with parchment paper and form dough into balls. Press two finger down on the cookies ( dough makes about 13 small or 8 large cookies).

6) Bake for 8-10 minutes & let cool for 10 minutes. 

7)  ENJOY!

How important is nutrition?  It is so important that the lack of it contributes to the death of about 11 million people around the world every year – and many of these people have enough to eat. 

 

These men and women eat several meals a day as well as lots of snacks, but yet they suffer from poor nutrition and it eventually cuts their lives short. 

 

If poor nutrition isn’t a lack of food, what is it?

 

Poor nutrition occurs when our body does not receive all the nutrients that it needs from the food that we eat.

 

Poor nutrition used to be primarily a problem in developing countries, but it is becoming more and more prominent in first-world countries because people eat too many nutrient-poor foods.

 

Nutrient-poor foods explained: Hamburger vs. Carrots

 

All the foods around you can be categorized as either nutrient-poor or nutrient-rich. Nutrient-poor foods have a few beneficial nutrients, but they also contain many harmful ingredients.  Nutrient-rich foods, on the other hand, are packed with healthy nutrients and have only minimal problem ingredients.

 

Most processed foods fall into the nutrient-poor category because they lose most of their original nutrients and are combined with chemical preservatives, dyes, artificial flavors, and excessive amounts of sodium and/or refined sugar during processing.

 

The common fast-food hamburger is a good example of a processed food that is nutrient-poor. Take a look at what it contains:

 

 

Hamburgers and other forms of fast food, as well as canned goods, freezer dinners, and many other convenience foods, are all heavily processed. Yes, they are convenient. They often have appealing flavors and almost everyone eats them. It is a reality, though, that they lack nutrients and are full of harmful ingredients.

 

 Anyone who bases their diet on nutrient-poor foods is at serious risk of developing heart disease, diabetes, cancer, and other serious health conditions that reduce quality of life and lead to death.

 

Unprocessed foods, also called whole or fresh foods, are the direct opposite of nutrient-poor foods. Whole foods overflow with life-sustaining nutrients and contain almost no harmful ingredients. The nutrient-rich category of foods includes high-quality protein, fresh fruits and vegetables, leafy greens, and whole grains.

Isn’t it amazing to see the drastic difference in the nutrition provided by nutrient-poor and nutrient-rich foods? 

 

Nutrient-poor foods may be able to fill our stomachs and satisfy our tastebuds for a while, but they result in poor-nutrition and over time rob us of our quality of life, our health and even our life itself.  

 

In comparison, nutrient-rich foods give us good nutrition that nurtures our bodies and gives us many benefits. 

 

What benefits do we receive from good nutrition?

 

 

 

  • A wide array of wonderful flavors – Processed foods have a limited selection of flavors that are based on either salt or refined sugar.  Unprocessed have a much wider array of flavors. These wholesome flavors are surprisingly complex and much more satisfying than salt or sugar.  
  • An easier time maintaining a healthy weight – Nutrient-poor foods tend to be energy-dense which means that they have a lot of carbohydrates that our bodies quickly convert into energy and then store as fat.

    Nutrient-rich foods have fewer carbohydrates and more fiber which helps our bodies to create energy at a steady rate and burn it instead of storing it on our hips or around our middles. 
  • Increased mobility – A diet full of nutrient-rich foods automatically helps us to burn fat and lose weight. These eases the burden on our joints, tendons, ligaments and muscles and gives us greater mobility. Along with that, losing weight helps us to feel better so that we want to be more active. 
  • Higher and steadier energy levels – The processed carbohydrates found in nutrient-poor foods spike our blood sugar and give us a burst of energy that is then followed by a discouraging slump.

    As mentioned earlier, nutrient-rich foods contain both carbohydrates and fiber. This combination of nutrients helps our bodies to process the carbohydrates slowly. This keeps our blood sugar stable and gives us higher levels of energy that remain constant for a longer period of time. 
  • Reduced risk of developing serious diseases – Good-nutrition gives our bodies everything that it needs to function efficiently, which includes healing itself and defend itself from harmful invaders. As a result, our risk of developing serious diseases, such as type 2 diabetes, heart disease, strokes, high cholesterol and cancer, decreases.  
  • Increased immunity – Nutrient-rich foods build up our immunity at every level. They help to strengthen our skin, repair and renew the mucus membranes lining our digestive tract, and make sure that our lymphocytes, neutrophils, and monocytes are able to identify microbes and destroy them efficiently. 
  • Healthy cognition and brain function – Good nutrition (and poor nutrition!) affects every part of our bodies including the brain. Eating foods that are full of healthy nutrients boosts blood flow and waste disposal in the brain. This increases alertness and our ability to reason, react appropriately to circumstances around us and recall memories. 

 

We conclude that nutrition is very important and the type of nutrition that we give our bodies strongly influences our quality of life. Eating a diet full of nutrient-rich foods gives our bodies the quality protein, high-fiber carbs, healthy fats, vitamins and minerals that we need to live, feel amazing and enjoy our lives to the max.
