These quinoa cakes are so versatile – throw in whatever you have, and be done!

Ingredients:

Quinoa
Onions
Peas
Bragg’s Liquid Aminos or Wheat Free Tamari
Egg
Salt and pepper to taste

Method:

Cook quinoa and add liquid aminos, peas, spinach, onions (whatever looks good).  After it is cooked, add egg whites (enough to cover), and stir.  Put a spoonful on the frying pan (with a cleanse friendly oil like coconut).  Fry each side a couple minutes or so.

Use under a bed of sautéed spinach with a soft egg for “Eggs Benedict.”  Have as a quick snack to go (cold or warm).  Use as a side dish or under a bed of veggies.  There are all kinds of things you can do with these!

 Recipe Notes:

We suggest starting with 2-3 cups of cooked quinoa, (depending on how many cakes you want to make), 3-4 eggs (or egg whites), and around 1 cup of finely chopped veggies (whatever you have that looks good). Add in whatever other seasonings you like – maybe 1-2 cloves garlic or fresh herbs. Lots of room for personalizing!
